- About the Role:ย
As a Japanese Sous chef, you will be responsible for the recipes, creation, cleanliness, and quality of the Japanese food served. Make sure sashimi, sushi, and others are served with high quality.
Responsibilities:
- Showcase advanced knowledge and skills in traditional Japanese culinary techniques, including sushi preparation, sashimi slicing, and teppanyaki cooking.
- Collaborate with the Head Chef to contribute ideas and assist in the creation of innovative Japanese dishes while ensuring authenticity and adherence to the restaurant’s concept.
- Maintain high standards of food quality, consistency, and presentation.
- Work closely with suppliers to source fresh and authentic Japanese ingredients.
- Contribute to maintaining food cost targets by minimising waste and optimising portion control.
- Handle high-pressure situations during busy service hours with composure and efficiency.
Requirements:
- Completion of a Certificate IV in Commercial Cookery or an equivalent
- Minimum 3 years experience in Japanese Cuisine.
- In-depth knowledge of Japanese ingredients, cooking methods, and traditional recipes is essential.
- Have good communication skills and attitude, familiar with teamwork.

- Possession of a valid English language certificate is mandatory, with a minimum overall score of 5.5 and no individual component scoring below 5.0 on the IELTS test.
- Successful completion of a Skill Assessment from the appropriate Australian skill assessing authorities (TRA or VETASSESS) may be required, contingent on your passport or the location of your placement.
